When should you buy frozen instead of fresh?

Frozen pies make sense when:

  • you want stock in reserve for unplanned guests or busy weeks;
  • your event time is uncertain, such as a gathering that might run late;
  • delivery would be awkward, for example on public holidays when bakeries close; or
  • you are giving a practical gift to someone with freezer space.

Fresh-baked pies are better when the pie is the star: a party centrepiece, a gift to impress, or a pie you want with a properly crisp crust.

How do you bake a pie from frozen?

Bake frozen pies straight from the freezer unless the packet says to thaw first. Thawing on the counter is a food safety risk in Singapore’s heat.

  1. Heat the oven to about 170 to 180C.
  2. Put the pie on a tray, with foil loosely over the top.
  3. Bake a whole pie for about 40 to 60 minutes with the foil on, then about 10 minutes without it so the crust browns. Personal pies need less time.
  4. Check the centre. It should be piping hot, at least 75C for chicken.
  5. Rest 5 minutes before cutting, so the filling settles.

Always follow the seller’s own instructions where they differ. Air fryers work for small personal pies, but times vary widely with the basket and the pie, so check the centre.

How long do frozen pies keep?

Baked pies keep for about 3 months at -18C, according to British Pie Week’s guidance, and the US Department of Agriculture gives 3 to 4 months for frozen leftovers. Commercial frozen pies carry their own dates. Label home-frozen pies with the date you froze them.

Can you freeze fresh pies from a bakery?

Yes. If you have bought more fresh pies than you can eat, freeze the extras on the day of purchase, wrapped tightly. Do not freeze pies that have sat at room temperature for hours first.
