How do you transport pies without damage?

Pies travel best flat, level and cool. Pastry is fragile and fillings shift, so a tilted box ends up with the filling against one wall.

  • Carry boxes flat. Use a flat-bottomed bag, not a plastic bag that swings.
  • In a car, put boxes on a level surface, such as the boot floor on a folded towel, not a sloping seat.
  • Keep them out of the sun. A parked car in Singapore heats up fast. Do not leave pies in the boot while you run errands.
  • Crack the lid for warm pies once you are home, so steam escapes and the crust does not go soggy.

How long can pies sit out?

Cooked pies should not sit at room temperature for more than 2 hours. The Singapore Food Agency describes 5C to 60C as the temperature danger zone, where bacteria grow fastest, and a Singapore afternoon sits right in it. Times are guides, because ovens, air fryers and pies vary. Always check the centre: it should be piping hot, at least 75C for chicken. Cover the top with foil if it browns before the middle is hot. How should you time reheating for an event?
